Some of Achille Confuorto’s earliest memories were made in the kitchen with his mom — rolling dough, preparing sauce, and feeling the rhythm of home-cooked meals. “She didn’t use recipes,” he says. “It was all by eye, by feel — and somehow, it always came out perfect.” Those slow, intentional cooking sessions weren’t just about food — they were about love, presence, and tradition. “I learned to cook with heart because that’s what she did,” he reflects. “That’s where it all started for me.”

Family is at the center of everything Achille does. It’s his why. When asked what his family means to him, he paused, took a breath, and said, “If I explained it, I’d cry, and I wouldn’t be able to talk anymore.” That depth of feeling runs through every part of his life. From the way he raised his kids to the way he connects with customers. You can taste it in the food, and you can feel it in the way he runs his shop.

That same love and intention fuel everything at AMA Pizza, where Achille is deeply committed to doing things the right way. “We make our dough fresh every single day. We shred our mozzarella fresh. We don’t take shortcuts,” he says. For him, quality isn’t a marketing buzzword — it’s the standard. “I always tell my guys: if you’re not proud to serve it to your mom, don’t serve it at all.” Every ingredient, every pie, and every detail is handled with care, because to Achille, that’s what makes the difference between making pizza — and making a memorable pizza.
