The importance of creating a strong brand for your shop

We stopped by Brooklyn Square Pizza to meet with the owner, Peter Grippo. His expansive menu includes “The Dream” and his famous upside-down Brooklyn square pie, which was rated an impressive 8.9 by Dave Portnoy.

Peter shares how family recipes and community feedback fuel the menu’s innovation, from crispy, pillow-like crusts to bold flavors like his bang-bang sauce and house-made vodka sauce. Outside of pizza, he also expanded the Brooklyn Square Pizza brand by creating its very own soda line.

Peter’s passion extends beyond the menu — he’s building a legacy for his family, with plans for his son to join the business. His focus on growth and quality service is matched by a commitment to hiring staff with respect, experience, and initiative. Peter told us that customers travel state lines just to try his pizza, and now we understand why.
